Google Philippines has teamed up with Commune Cafe to showcase the power of Artificial Intelligence (AI) in crafting culinary delights with a uniquely Filipino twist. From 12 to 26 September 2024, coffee lovers in Metro Manila can indulge in the Special Bibingka Latte — a limited-edition drink created in collaboration with Gemini, Google’s cutting-edge generative AI.
The Special Bibingka Latte draws inspiration from bibingka, a beloved Filipino Christmas delicacy traditionally served during the country’s extended holiday season. The drink features Commune’s signature espresso and steamed milk, topped with a combination of salted egg and queso de bola — ingredients that mirror the flavors of bibingka. To complete the holiday experience, the latte is then rounded out by a torched banana leaf to complete the Pinoy experience.
Using Google’s Gemini AI, the team at Commune Cafe was able to explore innovative drink ideas, resulting in this festive blend. Gemini provided a range of creative concepts, which served as a launching point for Commune’s baristas to craft their own masterpiece.
“Using Gemini for experimenting with concoctions was a lot of fun! It felt like having an extra brain in the room, ready to toss ideas around. It also streamlined our creative process significantly. Having access to Gemini’s vast knowledge made the whole process enjoyable and collaborative,” according to Rosario “Ros” Juan, Chief Extractor of Coffee at Commune Cafe, as she shared her excitement about working with AI.
To ensure a smooth collaboration, Google hosted a training session for Commune Cafe staff, focusing on how to utilize generative AI in creative processes. The baristas then participated in a mini-workshop, applying their new skills in a friendly competition to produce the best AI-inspired concoction.

Commune Cafe, located in Poblacion, Makati City, is well-known for its Philippine-sourced coffee and warm, inviting atmosphere. The AI-assisted Special Bibingka Latte will only be available for a limited time, making it a must-try for coffee enthusiasts and anyone curious about the fusion of tradition and technology.
